Eggnog (serves 2-3)
2 egg yolks
1 tbsp coconut sugar
2 cups full-fat milk (you could switch out for coconut milk if you require dairy free)
1/3 tsp cinnamon
1/2 tsp nutmeg
1/2 tsp vanilla extract
rum or brandy to taste (optional)
extra cinnamon or nutmeg to serve
Whisk the egg yolks and coconut sugar together in a bowl until well combined. In a medium sized saucepan heat the milk, cinnamon, and nutmeg until steaming (do not bring to the boil). Pour the warmed milk over the yolk mixture whilst whisking to combine. Pour this back into the saucepan, and heat on a low-medium heat whilst continually stirring. Heat until the mixture thickens slightly (do not allow to boil or the egg will scramble). Once it begins to thicken (enough to coat the back of a wooden spoon) quickly stir through the vanilla extract then immediately pour the mixture into a jug.
Transfer to the fridge to cool.
Add rum or brandy to taste if using. Pour into glasses, sprinkle with a little spice and serve.
