ABC Nut Butter

I love a simple recipe! And once again, here’s one that’s so simple it barely deserves the ‘recipe’ title but as it’s such a common feature in my fridge, I thought I’d post it here…

This particular ABC (Almonds, Brazils, Cashews) Nut Butter is a BIG hit in our house – regularly eaten straight from the spoon by all members 🙂 It’s creamy and filling, delicious spread on sooooo many things. It works as a great binder for some homemade nutty truffles or spread over crepes with some coconut yoghurt to top (my breakfast this very morning!)

Note: I activate and dehydrate my nuts before making the nut butter, but if you prefer you can also use them as is, or even roast them a little first.

ABC Nut Butter (makes approx 3 cups)

2 cups Almonds
2 cups Cashews
1 cup Brazil Nuts
1/2 tsp sea/rock salt (optional)

Blend all ingredients together in a high-speed blender or food processor until you reach your desired consistency (I like mine smooth). You may need to stop and scrape down the side of the container a few times. When ready, transfer to jar/s and store in the cupboard or refrigerator. YUM!
