Grain-Free Tortillas / Wraps (Gluten, Dairy & Refined Sugar Free)



I love having a quick and easy way to snaz up a dinner and make things a little different. These tortillas are one of those ways!

Forget food on the plate; whip up these wee winners and have your meal in hand! They’re the BFF of Mexican Pulled Pork, companion of curry dinners, and complete the look of gorgeous BBQ chicken wraps.

You’ll find many ways to use them and, being so simple, it’s not a great fuss!

Grain Free Tortillas/Wraps (makes approx 8)

2 eggs
1/2 cup full-fat coconut milk (can substitute both liquids for 1 cup almond milk if preferred)
1/2 cup water
4 tbsp tapioca flour
3 tbsp coconut flour
1/4 tsp sea/himalayan salt

In a small bowl, whisk the eggs together lightly. Add the coconut milk and water and whisk until the consistency is even. Sift in the tapioca flour, and coconut flour and add the salt. Whisk until well combined.
Allow to sit for 5 mins for the coconut flour to absorb nicely.
Heat a heavy-bottomed pan to a medium heat. Grease with coconut oil then pour in mixture to make the size tortillas you want (I make mine about the size of a bread plate). Use the back of the scooping spoon to spread out the mixture to a nice circle. Cook for 3-5mins, flip, then cook the other side. Continue the process until the mixture is gone and BAM; you have yourself some grain-free tortillas!
