We’re here! We’re in our new city, new home, new kitchen!

Yesterday (moving day)  kicked off early with scrambling around shoving things in boxes or cars before our big household items were loaded in the truck and transported down country. We passed through a ridiculously heavy rainstorm on the way but arrived safe and sound, ready to unleash life upon our new home.

The rest of the day was filled with unpacking, sorting, exploring the new city, getting the little lady settled, then falling to bed exhausted but excited.

Before we called it quits for the day, I made sure to dig out my chia seeds and some coconut milk to make this wonderful breakfast – quick to whip up so it’s ready to dig in by morning. You can eat it as is, or add some more layers – I went for some warmed berries and chopped almonds, the wee lady of the house enjoyed hers with greek yoghurt and sliced banana.

This morning as the sun rose, shining on our deck, we enjoyed a delicious first breakfast in this new place. Looking forward to all the adventures, creativity, and moments ahead.

Coconut Milk Chia (serves 2-3)

 

200ml coconut milk (1/2 can)

2 tbsp chia seeds

1/4 tsp vanilla extract

1 tsp honey or maple syrup, optional

 

Pour your coconut milk into a small bowl, add the chia seeds, vanilla extract, and honey or maple syrup – if using. Stir to combine, then place in the refrigerator overnight. The chia seeds will soak up the coconut milk and go jelly-like in consistency.

Serve as is or with warmed berries and chopped nuts on top.
