Easter Egg Nests (Gluten & Dairy Free, Paleo)

I love Easter weekend! As I’ve mentioned previously; the Easter reflections and moments are a truly special time to me, but I also love the fact it’s not over in one day. Starting with a contemplative Passover followed by a somber Good Friday, a pensive Saturday, a celebratory Easter Sunday, and topped off by a relaxing Monday – it’s always a weekend I look forward too.

Today, being Saturday, we’ve been having some fun preparing Easter egg nests to enjoy tomorrow.

I’m delighting in the little hands that are so eager to help this year! Needless to say, one nest has already disappeared…

Easter Egg Nests – makes 10 nests

 

100g dark chocolate (I use Whittakers 72% Dark Ghana or Lindt 90%)

1 tbsp coconut oil (can substitute with 1/2 tbsp olive oil if you don’t have this)

1 cup coconut thread/shredded coconut

1/3 cup chopped nuts & seeds of choice (I used a mixture of walnuts and sunflower seeds)

1/4 cup raisins, chopped (optional)

 

In a small saucepan gently melt the chocolate and coconut oil over a low heat until smooth and runny. Add the remaining ingredients and mix well to ensure all the components are well covered by the chocolate.

Allow to sit and cool for 30mins. Then make little mounds (1 tbsp of mixture each) on a baking paper covered or greased tray. Gently press a small cavity into the middle of each mound to give somewhere for an egg to rest.

Transfer the tray to the fridge to set and store until required. You can fill the middle with mini Easter eggs or a few almonds as an alternative.
